NEW YORK (1010 WINS) -- A chicken restaurant in Harlem is home to one of the best chefs in the city.

So says the James Beard Foundation, which announced the semifinalists for the prestigious James Beard Award on Thursday -- Chef Charles Gabriel's Country Pan Fried Chicken was among them.

Step inside the restaurant on Frederick Douglas Boulevard in Harlem and the heavenly smell of fried chicken wraps around you like a warm blanket.

"I do it just like my mom did it 80 years ago," he said.

It's not just customers who say it's the best, Gabriel said he was surprised to hear he was nominated by the Beard Foundation.

"I didn't even know, it shocked me, I didn't know what was going on," he said.

The secret to his chicken?

"I do it in the frying pan, I don't do it in the deep fryer. I fry all my chicken in the frying pan," he said.

It's cafeteria style plating, and it's pure comfort food.
